Red or Green
In England, they’re known for baked beans on toast. But in New Mexico we prefer pinto beans, green chile, and cheese topped by the state question: “Red or Green?”
Affectionately known as SOS . . . “Same Ole Stuff,” this old-time favorite smothers a slice of toast with creamed chipped beef gravy and is best eaten with a fork.
This one is more for those with a bit of a sweet tooth. Use a 30 to 70 percent mix of cinnamon to sugar and sprinkle over toast after butter is melted.
While many may like this simple topping, add your favorite jam or jelly to take this to the next level. This delightful combination easily works as a mid-morning snack.
Breakfast in One
Take your pick of the basic breakfast sandwich: bacon and egg, sausage and egg, egg and cheese, etc., and put it on toast.
Pick a cheese, any cheese (cheddar, provolone, Muenster, Monterey jack) you can’t go wrong, but to really mix it up add your favorite vegetable.
This may be the most odd morning ritual, but a surprising number of us dip our toast. Try putting your toast in your morning coffee, tea, milk, soda, or juice.
Peanut Butter & Banana
An instant healthy start to anyone’s morning that doubles nicely as an after-school snack for the kids. Drizzle chocolate syrup for an extra treat.
Avocado & Egg
There are many varieties to try when it comes to avocado and toast, but the most standard protein punch is mashed avocado spread on toast and topped with a fried egg.
